Cinnamon Apple Slice

Another winner for an autumn after-school snack, or served with cream/custard for pudding. Easy enough to make whilst multitasking - or with an enthusiastic young sous-chef.

Cinnamon Apple Slice.

Cake:

110g/4oz butter
110g/4oz caster sugar 

350g/12oz Self raising flour 

2 eggs beaten

Topping:

2lb/1kg cooking apples, thickly sliced 

45g/1 oz caster sugar
1 teaspoon cinnamon
60g/2oz butter

Pre-warm your oven to 180/gas mark 5
Grease an oblong, shallow tin 13 x 9in/ 33 x 23 cm

Cream the butter and sugar
Add the flour and eggs

Beat all together to form a pastry

Press the cake mixture firmly into the tin, making sure the corners are filled.

Cover with rows of sliced apples.
Mix sugar and cinnamon and sprinkle over the top, then drizzle with melted butter.

Bake in centre oven about 25 minutes until springy. 

Cut into 12 bars and serve hot with custard for a pudding or 24 squares for snack time.
